Executive Chef Garrett Pittler Brings Lighter Fare and Fresh Flavors to the Wine-Regional Menus
NASHVILLE, Tenn. – With the Tennessee temperatures rising, light and fresh summer menus have been introduced at City Winery Nashville.
Led by Executive Chef Garrett Pittler, the new dishes meet the restaurant’s commitment to reflect the culinary traditions of the wine regions from which many of the winery’s grapes are sourced while incorporating the seasonal ingredients and lighter plates guests crave in the summertime.
New concert menu items include small plates Smoked Trout French Onion Dip and a Warm Quinoa and Watermelon Salad with pickled fennel, mint, dill, balsamic and tzatziki, as well as a selection of seasonal Cheese and Charcuterie, Charred Tri Tip Steak with chickpea puree, tabbouleh, chimichurri and tzatziki, Blue Suede Cake, and the chef’s specialty, Nitro Gelatos.
Diners in the Barrel Room Restaurant & Wine Bar can choose from additional summertime favorites such as the Corn Bisque with tarragon buttered popcorn; Goat Cheese Caramelized Onion Tart made with tomato jam, arugula and balsamic; house-baked Focaccia served with citrus, garlic and toasted anise extra virgin olive oil; and the Morel and Peas, a black garlic linguini with pearl onion confit, preserved lemon, egg yolk and Pecorino Romano. For dessert, indulge in a Spiced Peach Galette served with butterscotch cayenne, streusel and bourbon vanilla gelato; a Black Forest Torte; or a Mascarpone Cheesecake Bomb with a blood orange center and served with a citrus cookie, pinot curd and candied orange.
For guests looking to expand their palate this summer, try the chef’s favorite: Steelhead trout. Showcasing the lifecycle of Steelhead trout and a zucchini, the dish features a zucchini blossom topped with trout roe, roasted baby zucchini with smoked trout mousse and a zucchini latke.
City Winery, located at 609 Lafayette Street, is open for dinner 5-10 p.m. Sunday through Thursday and 5-11 p.m. Friday and Saturday with the bar staying open one hour after the kitchen closes. Weekend brunch is available 10:30 a.m. to 2 p.m. Saturday and Sunday.
