Sevierville, Tenn. - The aroma of the wood burning and meat smoking will soon delight tastebuds as Trotter’s Whole Hog BBQ is joining the downtown Historic District of Sevierville, Tennessee, in May 2022. Introduced by the owners of The Appalachian, Chef David Rule and Developer Austin Williams, are excited to bring another addition to Bruce Street.
“We have been dreaming of Trotter’s Whole Hog BBQ for years,” said Rule. “Trotter’s Whole Hog BBQ will utilize locally sourced hogs from the surrounding area. Local sorghum, a native sweetener, will also be a key component in the preparation.”
The hogs will be cooked whole, low and slow. The process begins with the hog belly down while being smoked for several hours then flipped and mopped with the house made sorghum sauce. One of Rule’s main focuses is on the smoke, as his method will implore a distinct smoky flavor that is not to be mistaken.
The restaurant will have a casual and inviting atmosphere. Guests will order from a walk-up counter. While the menu spotlight is the whole hog, additional offerings including ribs, yardbird, sausages and all of the traditional barbeque fixings. Guests will be invited to pour their own beer from 20 taps, featuring local and regional craft beers. Trotter’s will also have plenty of family pack options to take home as well as catering. The restaurant will offer indoor and outdoor seating and will also feature regular live music performances.
“We have big future plans for the restoration and redevelopment of historic downtown Sevierville,” said developer and co-owner Austin Williams. “Trotter’s Whole Hog BBQ is another great addition that we plan to continue to build upon.”
Chef and Pit Master Rule has more than 20 years of restaurant experience. Rule has honed his craft alongside some of the region’s hospitality leaders. Most notably his time spent as Corporate Chef for Aubrey’s Restaurant Group and Butcher/Chef at Blackberry Farm, all before he opened The Walnut Kitchen in Maryville, Tennessee. He now is at the helm of Sevier County’s most revered eatery, The Appalachian. Throughout the years Rule has developed a style that is as calm and laid back as his demeanor with an underlying focus on the best sourcing of ingredients and technique.
